You eat it with your hands
You won't get any cutlery with your meal here, because the eel is eaten by hand. You can pull it off the head or tail end. First, the pelvic and dorsal fins are removed. If the smoked eel is very tender, the head is bent back and peeled off with the skin. Then you can nibble the tender meat off the bones.
